GARLIC - THE WONDER MEDICINE

Garlic Chewing may give you bad breath and pungent smell, but it an essential ingredient for cooking in Middle Eastern and Far Eastern countries. This garlic, can actually be a boon for your health.

Garlic and its cousins (Onions, chives and scallions) are probably the most intriguing of all vegetables. Garlic lowers cholesterol, triglyceride levels in our blood, reduces the risk of heart disease, High blood pressure, fights infection and boosts immunity. And, as if that weren't enough, the data is strong for the prevention of cancers of the digestive system, including the esophagus, stomach, colon and rectum. The National Cancer Institute is sponsoring a huge clinical trial on garlic's ability to prevent stomach cancer.

It was Louis Pasteur who first described the antibacterial effect of garlic and onion juices. Garlic is effective even against antibiotic-resistant strains. It even kills Helicobacter pylori (H. pylori), a kind of bacteria which is implicated in the cause of some stomach cancers and ulcers.

Allicin is the most powerful medicinal compound derived from garlic and provides the greatest reputed health benefits. Allicin does not occur in "ordinary" garlic, it is produced when garlic is finely chopped or crushed. The finer the chopping and the more intensive the crushing, the more Allicin is generated and the stronger the medicinal effect. As well as having antibiotic properties, Allicin is an excellent anti-fungal and has been used to treat skin infections such as athlete's foot.

The diallyl sulphides (sulfides) obtained from garlic are less powerful than Allicin but can still reportedly provide some benefits to health. Diallyl sulphides are also less volatile than Allicin. They do not degrade as quickly and, importantly, the health benefits survive cooking. They are reportedly good for the blood and circulation in some cases. The sulphides might also help to lower the levels of BAD cholesterol, hence garlic might help to keep the heart and cardiovascular system healthy. Diallyl suphides also have a reputation for boosting the immune system.

Scientists from the university of Alabama at Birmingham lead by Dr David Kraus said: have now found that Garlic can help keep the heart healthy. According to a them, garlic boosts the body’s ability to produce ALLICIN, for relaxing blood vessel, increasing blood flow and preventing blood clots and oxidative damage. sulphide which relaxes blood vessels and keeps blood flowing easily, as already told.

The researchers also found that RBCs exposed to minute amounts of garlic juice immediately began emitting hydrogen sulphide.

Further experiments showed that the chemical reaction took place mainly on the surface of the blood cells, playing a vital role in helping cells to communicate with each other. It stimulated the cells that form the lining of the vessels to relax, causing the vessels to dilate. This, in turn, reduced blood pressure, allowing the blood to carry more oxygen to essential organs, and reducing pressure on the heart.

It is good to take two or three cloves of Onion with food. If you can not relish the taste and smell you can have it cooked and take. Or you can even take Garlic Pearls available in pharmacies.

Garlic has been held in high esteem for its Health building qualities for centruries. It contains high percentage of minerals and vitamins. It also contains traces of iodine, sulphur and chlorine.

- It is regarded as a rejuvenator. It is found to remove toxins and revitalize blood.

- The ethers in garlic juice is so potent and penetrating that they help to dissolve accumulated mucous in the sinus cavities, in bronchial tubes and lungs.

Parsley Croquettes (4 pieces)

Ingredients

75 cold cooked rice

1 large potato (sliced)

Salt and black pepper

1 red onion (fine chopped)

1 teaspoon garlic powder

2 tablespoons fresh parsley (chopped)

3 tablespoons white sesame seeds

Vegetable oil

Action

a. Cook the potatoes in slightly salted water for 15-20

minutes, until they are soft.

b. Drain it and mash them fine.

c. In a large bowl, mix the potato puree with the cooked

rice, onion, garlic, parsley, salt and pepper. Mix thoroughly.

d. Make 4 croquettes from the dough.

e. Roll them on sesame seeds.

f. Heat 1 cm deep oil in a thick bottom frying pan, fry them

for 2 to 3 minutes, until they are browned from all sides.

Curry Puffs

Ingredients

1 Potato (peeled)

1 tablespoon green peas

1/2 teaspoon curry powder

1/8 teaspoon salt

1/8 teaspoon white pepper

1 onion (rings)

Frozen Puff dough

Action

a. Boil the potato in slightly salted water.

b. When soft, drain and dice it.

c. Mix the potato, peas and onion, season with salt and

pepper for a minute or two.

d. Place this mixture into the rolled out pastry dough.

e. Sprinkle with curry powder, and wrap in triangle shapes.

f. Bake on 200°C preheated oven for 20 minutes.

Tips:

a. Let the puff dough stand for 5-10 minutes, till it is a little

soften, before use.

b. You may increase the curry powder, or add chili powder

when desired.

What about mixing some spices for future use?

Spices A

3 tablespoons paprika

1 tablespoon cumin

1/2 tablespoon cayenne or chili

1 tablespoon bay leaves

Spices B-Curry Spices One

1.5 tablespoons coriander

1/2 tablespoon fenugreek

1/2 tablespoon fennel

1.5 tablespoons cumin

Spices B-Curry Spices Two

1 teaspoon cinnamon

1/2 tablespoon fenugreek

1 teaspoon cumin

1/2 tablespoon basil

1/2 teaspoon cardamon

1/8 teaspoon nutmeg

1 piece clove

1/2 teaspoon thyme

Spices C

1/2 teaspoon cinnamon

1/2 teaspoon cayenne

1/2 teaspoon nutmeg

1/2 ginger powder

1/2 tablespoon whole clove

Preparation

a. Mix all together, grind them.

b. Store them in glass bottles, for longer use.

c. May use them for seasoning, add in dressing sauce,

in soup for flavour.

I totally forgot it was national vegetarian day! I really wanted to celebrate it. And I knew it was a holiday, because I googled "obscure holidays" and it came up. I was really excited too. And I think I accidentally did.

Breakfast: Bagel with Soy Cream Cheese

Lunch: Eggplant with Cheese

Dinner: Veggie Fried Rice and Broccoli in Garlic Sauce.

Oh my gosh! I did.

And it's weird because I was going to have a BLT for lunch with turkey bacon, but I didn't feel like making it. And I usually order Pork Fried Rice from the Chinese Food place and pick out the pork.

That's pretty cool.
