"Stir-N-Roll Pizza" - 2 pizzas

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon salt

2/3 cup milk

1/4 cup salad oil

2 tablespoons salad oil

Pizza Toppings (below)

Heat oven to 425*. Measure flour, baking powder, salt, milk and 1/4 cup salad oil into bowl. Stir vigorously until mixture leaves side of bowl. Gather dough together and press into ball. Knead dough in bowl 10 times to make smooth. Divide dough in half.

On lightly floured cloth-covered board, roll each half into 13" circle. Place on pizza pan or baking sheet. Turn up edge 1/2" and pinch or pleat. Brush circles with 2 tablespoons salad oil. Layer Pizza Toppings on circles in order listed. Bake 20-25 minutes. Cut into wedges to serve.

PIZZA TOPPINGS:

1/2 cup grated Parmesan cheese

1 (8 oz.) can tomato sauce

1 tablespoon chopped onion

1/2 teaspoon salt

1/2 teaspoon oregano

1/4 teaspoon pepper

1/2 lb. shredded mozzarella cheese

VARIATIONS:

Pepperoni Pizza - Before adding mozzarella cheese, sprinkle 1/2 cup thinly sliced pepperoni on circles.

Sausage Pizza - Before adding mozzarella cheese, sprinkle 2 cups cut-up brown 'n serve sausages on circles.

Mushroom Pizza - Before adding mozzarella cheese, sprinkle 1/2 cup sliced mushrooms, 1/4 cup sliced pitted ripe olives and 1/4 cup chopped green pepper on circles.

Combination Pizza - Before adding mozzarella cheese, sprinkle with all of the above!

Many activities throughout the island to enjoy, including whitewater rafting, hang-gliding, whale watching tours, karaoke, dancing, village feasts and local festivals, snorkelling, hot springs, etc.

EDIT: OK. Nightmarkets are wonderful. You need not go to the one in Taipei, as there are plenty of other things to do while there. Instead, head for the one in the Feng Chia University district in Taichung. There are two fine places to eat within a short walk that I can recommend (one has Spanish cuisine, it's called "Made in Spain"; the other has the best burger and salad in town, and with a draft beer, Elvis music, and a private outdoor TV, you can't go wrong, it's called "Offer Make", located just outside In One City Inn, which is a very nice place to stay I might add). For some other nighttime action, visit "The Show House" in downtown where the Taiwanese and Ukrainian girls put on a nice stage act. Taxi service to/from your accommodations is cheap and easily available. A Y!A member named "addcoffee" is very familiar with the Feng Chia area of Taichung, and she can likely help you find your way around.
