vanilla just adds a bit of flavor to the waffles but is not necessary, especially if you have things to top them with. If you have some, add it, but if you don't- don't worry about it.

If you've never made waffles before, it may take a little trial and error to get them the right "doneness".

As for the amount of oil/butter- Do you like a crispy waffle? Or a softer waffle? Personally I like them a little crispy, but it depends on your preference. Since it's your first time with this recipe, I'd go with an amount in the middle (maybe 3.5?)- then if you make them again, you can adjust if if they weren't to your preference.

If you don't have a brush to brush it on, you can use a paper towel dipped in the oil/butter.
