How to cook divinity and peanut brittle on a cloudy day?

If making divinity on a rainy day...you may need to beat it a little longer and at a higher speed. As soon as you pour the syrup into the egg whites...turn that mixer up on high and beat that divinity until it is dry. It will take 5 to 7 minutes to do this. If after you start dropping it...it tries to go limp...put it back on the mixer and beat it some more.

Well for one you didn't use all of the ingredients. The list of ingredients is there because you need them all to make it work. Probably what happened with your peanut brittle is the baking soda reacted and made it all fizz up. Next time use all of the ingredients. : )

1 cup water

- 2 cups sugar

- 1 cup corn syrup , preferably light

- 2 cups raw peanuts

- 1/2 teaspoon salt

- 2 tablespoons butter, plus extra for pan and fingers

- 1 teaspoon baking soda

- 1/2 teaspoon vanilla (optional)

(vanilla is for extra flavor. since you want to leave out the peanuts i suggest using the vanilla so it's not just sugar flavor.)
