Today is National Caviar Day. What do you think?

I tried caviar. I don't know how much it costs. I don't think you need to spend a fortune either. You have to eat it with crackers, or special edible cups made for caviar. You normally would put cream cheese on the cracker and very little caviar. You would want to try a mild caviar with the very small eggs. I wouldn't eat it plain because it is too strong and salty. But with the cream cheese and cracker it was good.

They say black caviar is the best. I think I had a bit of both black and red caviar. I am sure I didn't notice a big taste difference. The less expensive red caviar could be a good way to try it.

Caviar is processed with so much salt that it will stay fresh in the can almost indefinitely. You don't have to worry about freezing either. I actually store some of my caviar in the freezer. The fish oil content is so high it acts like antifreeze. About the only thing that damages caviar is extreme heat.

Yes, I have certainly found life to be very much like that....having champagne and caviar one day, then, next day chips and beer.

Many years ago, right after my beloved young husband died, leaving me with three small children, I found myself dead broke. Went to the post box in front of my house, and laughed out loud right at the kerb. I must be the only person in America who ever got a catalog from Tiffany's and a cut-off-warning-notice from the utility company in the same mail.

It was such an extraordinarily frightening time...before I went to sleep, during my night prayers I would ask God to send a solution. But, as all the years have passed, solutions do come, things do work out....one survives and lives through the hard times.

Still, isn't it an unbelievable blessing...the resilience that is structured into all of us? Especially when we can look at that meal of chips and beer and find the grace to be thankful that at least we have something to eat?!
