The best recommendation I can make is that you watch a film called "Fat Head", you can find it on NetFlix, hulu.com, YouTube and several other sources. You'll learn a lot about nutrition, if fact it'll turn what you think you know up-side-down. The fun part about this film is that in order to prove his point the film maker eats nothing but fast food for a month, and by simply avoiding the carbs and sugars he looses weight and improves his cholesterol levels. Best of all the guy isn't trying to sell some diet pill or exercises plan or anything, he's just trying to get the information out there. And that information is simply: fat doesn't make you fat - carbs and sugar do.

Frozen veggies are fine.

For our birds, we mix up bean cuisine, canned chicken, and various kinds of frozen veggies (peas, carrots, corn, green beans, etc.) and then freeze them in individual servings (we use yogurt containers with snap-on lids. Zip-lock baggies work, too). You can use premixed frozen veggies if you can find a suitable mix.

We keep one serving in the refrigerator instead of the freezer. Each day when we heat the vegetables for the birds, we put a frozen serving in the refrigerator to thaw for the next day. That way they only need about 15 seconds in the microwave (we're not cooking them, just removing the chill). The birds get veggies every evening in addition to the pelleted food which they have all the time, and the table scraps they get whenever we eat things they can share.
