Yes! And here's one of my wife's favorites, just for the occasion, ( I secretly surprised her with it for supper, this evening ). It's called , Baked Eggplant & Mushrooms Royale. Pre-heat oven to 350*f. Ingred. : 1 med - lg. eggplant, 1/2 lbs. mixed fresh mushrooms, chopped,(e.g. crimini's (baby bella's), oysters, chantrelles, shiitake and button), 1/2 c. cream of mushroom soup, undiluted, 1/4 c. milk, 2 eggs, well beaten, 1 sm. onion, chopped, 1 c. soft bread crumbs, 1/4 c. melted butter, 1/4 tsp. salt, 1/8 tsp. pepper (1/8 tsp. = a pinch). FOR TOPPING : 1/2 c. dry Bread Crumbs mixed w/ 2 Tbl. melted butter. DIRECTIONS : Cut ends off eggplant and peel. Cut into large pieces. Boil in about 3 c. salted water for 15 min. Drain and mash. Stir in the other ingredients until fully blended. With pure olive oil, grease a 1-1/2-quart casserole. and pour in mixture. Sprinkle the topping, evenly, over whole dish. Bake for 25 - 30 min or good & bubbly. Makes 6 servings.
How can mushrooms grow if I haven't planted seeds?
Mushrooms are the fruit of a soil fungus that can be hundreds of years old and that can span acres of soil. Because the underground network of threads making up the body of the fungus are microscopic, you can't see them in the soil. One cannot easily predict when or where the mushrooms will pop up (sometimes overnight and then disapearing in days).
Flower seeds are spread by birds and the wind. The resulting plants are often hardier the ones you plant because only the best seeds for that spot will grow.

"Stir-N-Roll Pizza" - 2 pizzas
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2/3 cup milk
1/4 cup salad oil
2 tablespoons salad oil
Pizza Toppings (below)
Heat oven to 425*. Measure flour, baking powder, salt, milk and 1/4 cup salad oil into bowl. Stir vigorously until mixture leaves side of bowl. Gather dough together and press into ball. Knead dough in bowl 10 times to make smooth. Divide dough in half.
On lightly floured cloth-covered board, roll each half into 13" circle. Place on pizza pan or baking sheet. Turn up edge 1/2" and pinch or pleat. Brush circles with 2 tablespoons salad oil. Layer Pizza Toppings on circles in order listed. Bake 20-25 minutes. Cut into wedges to serve.
1/2 cup grated Parmesan cheese
1 (8 oz.) can tomato sauce
1 tablespoon chopped onion
1/2 teaspoon salt
1/2 teaspoon oregano
1/4 teaspoon pepper
1/2 lb. shredded mozzarella cheese
Pepperoni Pizza - Before adding mozzarella cheese, sprinkle 1/2 cup thinly sliced pepperoni on circles.
Sausage Pizza - Before adding mozzarella cheese, sprinkle 2 cups cut-up brown 'n serve sausages on circles.
Mushroom Pizza - Before adding mozzarella cheese, sprinkle 1/2 cup sliced mushrooms, 1/4 cup sliced pitted ripe olives and 1/4 cup chopped green pepper on circles.
Combination Pizza - Before adding mozzarella cheese, sprinkle with all of the above!
