Donuts, also seen spelled as doughnuts, depending on the region, are delicious pastries made by frying dough in oil. Making donuts at home does require some work, but many cooks feel that it is well worth the effort, because it is possible to make delicately flavored, light, scrumptious donuts which can be eaten fresh, rather than several hours or days old. Because of the involved process that goes into making donuts, it is worth making a large batch and planning a donut making day for a party or another occasion when a lot of people will be around the house to help you eat them.

There are two basic doughs for donuts; a yeast dough, which involves much more work, and a quick cake dough. Yeast donuts tend to be lighter and fluffier, while cake donuts are richer and heavier. General rules for handling either batter are the same: start with room temperature ingredients, handle the dough as little as possible, and plan on refrigerating the dough before you work with it. Roll or pat the dough out to a thickness of approximately ¼-½ inch (½-1 ¼ centimeters) and use a donut cutter, if possible, to cut the dough. If not, use two cookie cutters of graduated size to create the classic round shape. When you have cut your donuts out, let them rest on wax paper for approximately 10 minutes, forming a small crust which will prevent them from getting oily when you fry them.

Use clean, fresh oil in a spotless deep fryer or wok to make donuts. Any sort of oil will do, as long as it can be brought to 360 degrees Fahrenheit (182 degrees Celsius) and held there without smoking. Keep a thermometer in the oil to check the temperature, and do not overcrowd it with donuts and holes. Remember that the donuts will expand as they are fried, so leave wiggle room for the pastries to do so with ease. When the donuts start to turn golden brown, flip them to fry the other side, and then place them on paper towels to drain before rolling them in powdered sugar or frosting them. You may find that dipping your spatula in the oil, placing a donut on it, and lowering it carefully into the oil for frying is the easiest way to get donuts into the fryer, and remember to use a slotted spoon to remove them, allowing grease to drain.

To make yeast donuts, start by proofing 4 ½ teaspoons of yeast, or the contents of two yeast packages, in 1 cup warm water. After the yeast has been activated, add one cup of flour, mix, and allow it to rest for 30-60 minutes while you assemble the rest of the ingredients. In a separate bowl, beat 10 tablespoons of unsalted butter with 2/3 cup sugar and add three eggs one at a time, following with two teaspoons of vanilla and one teaspoon of salt. Add the butter mixture to the yeast mixture along with three and one half cups flour, mixing until the dough is golden and even. Butter a clean bowl and roll the dough around in it, coating it evenly, before covering it with plastic wrap and placing it somewhere warm to rise for one to two hours. When the dough has doubled in size, punch it down, wrap it in plastic, and refrigerate it for three hours or overnight. Because the dough may burst the plastic, add another plastic bag to prevent it from contacting the air and developing a crust. Make donuts as directed above, and enjoy them.

To make cake donuts, which are much easier and quicker, sift together two cups of flour, ½ cup of sugar, one teaspoon of salt, one tablespoon of baking powder, ¼ teaspoon of cinnamon, and 1/8 teaspoon of nutmeg. Add two tablespoons of melted butter and mix until crumbly. In a separate bowl, beat together ½ cup milk and one egg, and add this mixture to the crumbly mixture all at once. Knead the dough lightly before chilling it for at least one hour and then follow the directions for forming donuts.

doughnut Muffins Recipe:

1 egg

1/3 cup oil

1/2 cup milk

1 1/2 cups flour, sifted

1/2 teaspoon nutmeg

1/2 teaspoon salt

2 teaspoons baking powder

3 tablespoons sugar

topping

3 tablespoons sugar

1 teaspoon cinnamon

Beat egg.

Add in oil and milk and continue to beat until mixed.

Set aside.

Sift flour,nutmeg,salt,baking powder and sugar into the egg mixture.

Mix and fill muffin cups.

Combine sugar and cinnamon.

Sprinkle genorously on top of each muffin.

Add a dollop of butter atop each muffin Bake at 400 for 20 minutes.

NOTE:add a couple of sprinkles of cinnamon to the batter.

Or srinkle a little of the cinnamon/sugar mixture on the bottom muffin cups before adding mix.

recipe 2 - easy doughnut ball

2 tablespoons vegetable oil or canola oil

3 tablespoons granulated sugar

1 large egg (or Egg Beaters equivalent)

1 cup all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt

4 tablespoons whole milk or 2% low-fat milk

1/8 teaspoon allspice

additional granulated sugar (optional)

confectioners' sugar (optional)

Combine well the oil, egg and milk --.

In a seperate bowl combine well the sugar, flour, baking powder, salt and allspice --.

Then add the egg mixture to the dry mixture and combine well --.

Drop by spoonful into hot (375°F.) oil in deep pan on stovetop or in deep fryer --.

Fry until golden brown (you may have to turn them over as they cook to get all parts browned) --.

Remove from oil, draining carefully but while still damp from frying, roll hot doughnut holes in the granulated sugar or confectioner's sugar OR you may simply leave them plain.

recipe 3: cinnnamon doughnut for a twist

1 3/4 cups flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cinnamon

3/4 cup sugar

1/3 cup vegetable oil

1 egg, lightly beaten

3/4 cup low-fat milk

1/4 cup butter, melted

1/3 cup sugar

1 teaspoon ground cinnamon

In a large bowl, combine flour, baking powder, salt, nutmeg and cinnamon. In a small bowl, combine sugar, oil, egg and milk; stir into dry ingredients just until moistened.

Fill greased or paper-lined muffin cups half full; place 1 teaspoon jam on top. Cover jam with enough batter to fill muffin cups three-fourths full.

Bake at 350F for 20-25 minutes or until a toothpick comes out clean.

Place melted butter in a small bowl; combine sugar and cinnamon in another bowl. Immediately after removing muffins from the oven, dip tops in butter, then in cinnamon sugar.

recipe 4: Pumpkin doughtnut for a change!

3 cups flour

1/3 cup nonfat dry milk powder

3 teaspoons baking powder

3/4 teaspoon cinnamon

1/2 teaspoon powdered ginger

1/4 teaspoon nutmeg

1/4 teaspoon salt

2 tablespoons vegetable shortening

1 1/4 cups sugar

2 large eggs

1 cup canned pumpkin

1 teaspoon vanilla

1 1/2 cups ginger ale

oil (for frying)

1/2 cup sugar, for coating

1 teaspoon cinnamon, for coating

Sift together the flour, dry milk, baking powder, cinnamon, ginger, nutmeg and salt.

In a large bowl, cream together the shortening and sugar; then beat in the eggs.

Mix the pumpkin and vanilla.

Add the dry ingredients alternately with ginger ale, mixing well after each addition.

In a large heavy pan, heat 3 inches of oil to 375 degrees.

Drop batter 1 tablespoon at a time for each doughnut into hot oil. Cook 4-5 doughnuts at a time for about 2 minutes, turning to brown evenly. Remove with a slotted spoon and drain (paper bags work good for this).

Combine sugar and cinnamon in a paper bag and shake doughnuts in the bag to coat.

These are best served immediately, though they may be made a day ahead and reheated in a 450 degree oven for 5-6 minutes.

recipe 5:POLISH DOUGHNUT HOLES

vegetable oil (for Frying)

1 biscuit dough (any variety, the "Pillsbury Flake rolls" tasted the best!)

1 cup sugar

2 tablespoons cinnamon

Heat oil to 450.

Cut individual Biscuits into quarters.

Place in oil for 2 minutes.

Turn dough over using a fork.

Cook an additional 2 minutes.

Drain and place on a paper towel for a moment.

Combine sugar and cinnamon in a large bag.

While still hot, place doughnuts in cinnamon sugar and shake.

Best served HOT.
